Tex Mex Macaroni Casserole

  • Brown beef and onion in large skillet on medium-high heat. Drain fat.

  • Stir in Seasoning Mix, water, diced tomatoes, tomato sauce and corn. Bring to boil. Add pasta. Reduce heat to low; cover and simmer 12 minutes, stirring occasionally.

  • Sprinkle with cheese, cover. Let stand 5 minutes or until cheese is melted.

Cooking tip

Test Kitchen Tips:
• To prepare with fresh tomatoes, substitute 2 cups fresh chopped tomatoes for both the canned diced tomatoes and tomato sauce in the recipe.

• To reduce sodium to 352mg per serving, switch to McCormick® 30% Less Sodium Taco Seasoning Mix or McCormick® 30% Less Sodium Mild Taco Seasoning Mix, no salt added diced tomatoes, and no salt added tomato sauce - a savings of 420mg sodium!

    I love this, this was my first time making it and it was really!!! good, I am going to make it again, I had to add more cheese about 2 cups more to 1.

    I have made this twice now and both times it was delicious. I added some red pepper flakes last time to give it more spice.
