Slow Cookers Fiesta Chicken

Serve shredded chicken slow cooked with tomatoes, corn and black beans over rice or as a burrito in flour tortillas. Make it a fiesta of flavors by adding toppings such as shredded cheese, sour cream, chopped cilantro or green onions.

  • Place chicken in slow cooker.

  • Mix Seasoning Mix, tomatoes, corn and beans until blended. Pour over chicken. Cover.

  • Cook 8 hours on LOW or 4 hours on HIGH. Remove chicken from slow cooker.

  • Shred chicken, using 2 forks. Return chicken to slow cooker; mix well. Serve over cooked rice with assorted toppings, if desired.

Cooking tip

Slow Cooker Tip: For best results, do not remove cover during cooking.

Fiesta Chicken Burrito: Prepare as directed. Serve in flour tortillas with desired toppings. Fold over bottom and sides of each tortilla to serve.

Substitution Tip: Use 1 cup frozen corn in place of the whole kernel corn.

    So good and so easy! It's probably one of the quickest slow cooker meals to make. At the end of the day, when you come home, your house smells amazing and the chicken pulls apart with two forks. We ate them with soft corn tortila shells, avacado, salsa, red onion and cilantro. Yummy!!! Can't wait to make it again.

    So yummy and easy!! I started it when I left for work and cam home to a delightful smell from the kitchen. Certainly a family favorite. Definitely will make again! We served with flour tortillas. Also very good on tortilla chips like chicken nachos. Yummy!

    SO GOOD! The black beans I used came pre-seasoned with garlic and onion powders, and the cans of diced tomatoes came with green chiles. Served up with shredded cheese and sour cream in tortillas and this was a hit with my family! And I agree that it was one of the fastest slow cooker meals I have ever made.

    LOVE THIS! Quick, easy, and best of all DELISH!!!!! A coworked use to talk about it all the time and when I finally made it I totally agreed with her how good it is! Great for nights that I get home late and dont feel like cooking a whole meal, love my slow cooker.

    I loved this recipe! I was unable to find the McCormick fiesta chicken seasoning in my grocery store but I used the McCormick chicken taco seasoning instead and it was fantastic. I also used frozen steamer corn instead of canned. I put the chicken mixture in a soft shell taco with cheese and it is definitely a recipe for my "go to" dinner ideas.

    I made this dish last night and it really doesn't get any easier than this. Yum!! We had it one night on rice and some of us had it wrapped in a burrito. I tried both ways (leftovers) and loved it MUCH better in a burrito!

    JUst had this for supper. I used diced tomatoes with jalapenos. We served this over rice. This was wonderful. My husband said don't change a thing. I served sour cream and a Tex Mex sauce of Ranch dressing and Salsa. Thanks for this product.
