Ingredients

- 1 tablespoon oil
- 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
- 1 pound smoked sausage, cut into 1/2-inch slices
- 2 cups frozen bell pepper and onion blend
- 1/4 cup flour
- 1 teaspoon McCormick® Oregano Leaves
- 1 teaspoon McCormick® Whole Thyme Leaves
- 1/4 teaspoon McCormick® Crushed Red Pepper
- 4 cups chicken broth
- 1 can (14 1/2 ounces) diced tomatoes, drained
INSTRUCTIONS
- 1 Heat oil in large saucepan or Dutch oven on medium-high heat. Add chicken; cook and stir 5 minutes or until lightly browned. Add sausage and bell pepper blend; cook and stir 3 minutes. Sprinkle with flour and spices. Cook and stir 1 minute.
- 2 Gradually stir in broth and tomatoes. Bring to boil. Reduce heat to medium-low; simmer 30 minutes, stirring occasionally. Serve over cooked rice, if desired.
