Salsa Chicken

Seasoning chicken strips with McCormick® Taco Seasoning Mix is a great way to spice up dinner. Sweet and spicy Salsa Chicken is delicious served with rice and black beans.

Serves: Makes 4 servings.

  • Place Seasoning Mix on plate or in plastic bag. Add chicken tenders; toss to coat.

  • Heat oil in large skillet on medium heat. Add chicken; cook and stir 5 minutes or until chicken is lightly browned.

  • Stir in tomatoes and preserves. Reduce heat to low; cover and simmer 10 minutes. Serve over rice, if desired.

    this is totally ok and easy. i used it with tacos and added salsa, cheese and sour cream.

    My family loves this recipe (we've been enjoying it for years). Once I only had peach preserves on hand so I used it in place of the apricot and liked it better. Now I always prepare it with peach preserves. Also it can be pretty soupy if you don't drain the tomatoes. So I always drain the tomatoes and add in the liquid as necessary. I served it to friends whose husband doesn't like fruit and he loved it. Its great with salad and saffron rice - Yummy!

    I've been making this for years. It's a family favorite and has become one of my "go to" recipes when I need something quick. I've given is recipe to all of my friends and they love it, too.
