Herb Chicken Skillet with Spinach and Tomatoes

Ready in 30 minutes, this skillet chicken dish features good-for-you tomatoes and spinach. Serve over pasta or couscous.

  • Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 10 minutes or until browned. Add onion; cook and stir 5 minutes or until softened.

  • Stir in tomatoes, water and seasonings. Bring to boil, stirring occasionally. Reduce heat to low; cover and simmer 3 minutes or until heated through.

  • Stir in spinach; cook 2 minutes or until spinach begins to wilt.

    Delicious! So easy! I made a serving for three and didn't have canned diced tomatoes so I used two fresh ones and a little less than 1/4 cup of water instead of 1/8th and it was great.

    A delicious and quick easy meal. Just added a few slices of mushrooms, used 2 big fresh tomatoes instead and added more h2o and sodium since they like more gravy on it. They loved it, be on my cookin list ..... Thanx a lot MC.

    This was delicious. I used fresh tomatoes instead of diced, and omitted onions as I do not like them. I didn't have any fresh chicken breast on hand, so I used frozen and it still turned out great. All was served over spaghetti. My fiance and I loved it. I will definitely make this again.

    Extremely easy and delicious. I made it exactly as written because I had all the ingredients on hand. I served it over rice and found that to be a great choice. I was really surprised at how flavorful the dish was, considering how easy it was to put together. I will definitely be making this again!

    Easy and very pretty meal. I melted shredded mozzarella on top at the end and sprinkled with parm cheese. Then I served it on top of jasmine rice. So beautiful and so good!!

    This was just alright to me. It was really easy but my mistake may have been to use fettuccine noodles. It's what my husband wanted but I didn't think it went well; there just wasn't enough sauce.

    Really good! I am so pleased to have such a great tasting recipe that is so nice to look at too. This is one I will use for special occasions and guests. I cut the chicken breasts into bite-size pieces before browning -- and I added a bit more of each spice.

    This is an absolutely delicious meal, however I made a few modifications. First I used fresh chicken and then saved the chicken broth and used that instead of the water. Also, I used fresh baby tomatoes, 8 oz of spinach and 3 cloves of garlic. It was divine. So fresh and crisp. The perfect spring time meal. I highly recommend.

    Excellent recipe! Quick and easy to make, and I had all the ingredients on hand which was a plus. I added about a cup of cooked pasta to complete the meal. Will definitely make it again.
