These gluten-free vegetable fajitas are perfect for meatless Mondays or for a vegetarian meal.
Heat oil in large skillet on medium heat. Add bell peppers and onion; cook and stir 5 minutes or until tender-crisp. Add squash, tomatoes, water and Seasoning Mix; cook and stir 3 minutes or until vegetables are tender.
Spoon vegetable mixture into warm gluten-free tortillas. Serve with assorted toppings, if desired.
