Easy Vegetable Fajitas

Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium green bell pepper, cut into thin strips
  • 1 medium red bell pepper, cut into thin strips
  • 1 medium onion, cut into thin strips
  • 1 cup medium yellow squash, cut into thin strips
  • 1 large ripe tomato, cut into thin wedges
  • 1/4 cup water
  • 1 package McCormick® Fajita Seasoning Mix
  • 8 (6-inch) tortillas, warmed

INSTRUCTIONS

  • 1 Heat oil in large skillet on medium heat. Add bell peppers and onion; cook and stir 5 minutes or until tender-crisp. Add squash, tomatoes, water and Seasoning Mix; cook and stir 3 minutes or until vegetables are tender.
  • 2 Spoon vegetable mixture into tortillas. Serve with assorted toppings, if desired.

Serving Suggestion: Serve with assorted toppings, such as salsa, sour cream, guacamole, shredded cheese and chopped tomatoes.
