Lemon Poppy Seed Muffins

Muffins are a snap when you start with a cake mix. These muffins, speckled with poppy seeds and flavored with lemon extract, make a great breakfast or tea-time treat.

  • Preheat oven to 350°F. Lightly grease or line 24 muffin cups with paper baking cups.

  • Mix all ingredients in large bowl with electric mixer on low speed 30 seconds or until moistened. Beat on medium speed 2 minutes. Spoon batter into prepared muffin cups, filling each cup 2/3 full.

  • Bake 18 to 23 minutes or until toothpick inserted into muffin comes out clean. Cool completely on wire rack.
