Slow Cooker Caribbean Jerk Chicken

My family is pretty busy. With two kids, we find ourselves running around to sports practices, local events and of course, everyday life activities. When it comes to dinner, I don’t have much time in the kitchen before we are all starving, so I like to think of ways to make delicious meals without jeopardizing flavor.

I’m a huge fan of make-ahead meals: especially when they call for a slow cooker. Using the slow cooker not only gives me more time for other things, it also is my secret for adding delicious flavors into our meals!

One of my family’s favorites is jerk chicken. While jerk chicken can be a long process when smoked, baked or grilled—I’ve found a way to make it in the slow cooker without missing out on the delicious flavors. With just 3 ingredients (and any sides that I choose), it’s a meal that takes about 30 minutes of my time! I prep and cook my chicken ahead of time, so when dinnertime comes around, I’m ready to feed the family. Making delicious meals convenient doesn't have to sacrifice flavor.

3 chicken breasts
1 bottle of Lawry’s Caribbean Jerk Marinade
1 onion, cut into rings

1. Cut chicken breast into thick strips.
2. Place in a bowl, add marinade and refrigerate for 20-30 minutes.
3. Slice a whole onion into rings.
4. Remove chicken from refrigerator and place into slow cooker with marinade juice.
5. Add onion over the chicken in the slow cooker and cook for 4 hours.
6. Remove from slow cooker and place in broiler for 10 minutes.
7. Serve with your favorite rice and beans.
