Ruby’s Ground Beef Corn and Zucchini

Last year my family decided to start our very own garden bed. We knew nothing about gardening but we wanted to teach our kids about growing vegetables. Lucky for us, we choose some pretty fast blooming and growing plants like zucchini, chili peppers and even cilantro! Our first harvest was a couple of Chile peppers and 2 huge zucchini.

My kids never really had zucchini before then but I knew if I added it to one of our favorite meals they’d learn to love it. My ground beef and corn was a huge success with added diced zucchini. What’s even better is watching my kids go out to our garden to pick what vegetables they want for dinner. We didn’t set out to change their eating habits or favorite dishes but in the process it all just happened. Now we enjoy eating the very vegetables we pick. Still today the kids ask to eat Ground Beef Corn Zucchini tacos. We look forward to changing the vegetables we grow in hopes of learning something new and making something even more delicious for the family. 

Prep time: 5 mins | Cook time: 20 mins | Feeds: 20 mini empanadas 

1lb of ground beef
1½ tbs Lawry’s Seasoned Salt
1 cup of diced zucchini
1 cup of corn
½ an onion diced
½ a tomato diced
Flour tortillas
2tbs of butter

1. To a pan, add butter and melt.
2. Add onion, tomato, zucchini and corn and sauté.
3. In a separate pan add seasoned ground beef and brown.
4. Strain beef and add to vegetables.
5. Add ½ cup of water and cook at medium high until liquid reduces. 

TIP: Serve with rice and warm flour tortillas for tacos.
