Ruby’s Crispy Rolled Beef Tacos

Cooking for my family brings me great joy. The best part is seeing their faces of enjoyment when they’ve finished a meal. 

But it wasn’t always like this! I used to stress about the food I fed them, because I didn’t think it was as great as the food I enjoyed as a kid. I pressured myself to cook amazing dishes so much, that making simple tacos felt like a drag. I wanted the same flavors I grew up with to shine through in the food I cooked. I asked everyone in my extended family for recipes, tips and my nana’s secrets. Can you believe they all called for simple ingredients? And still, I couldn’t make my food taste the same.

It wasn’t until I stopped feeling bad about using helpful seasoning packets that I started to feel good about what I made. I learned that they were the easiest way to make something flavorful, and also cut down on my time in the kitchen. 

The reality is that my kids and my husband were always satisfied with the meals I prepared. It was the pressure I put on myself to live up to my childhood taste buds that stopped me from enjoying my own tasty dishes! Now I don’t feel bad about the shortcuts. I don’t feel guilty getting a little help!

Prep time: 5 minutes 
Cook time: 30 minutes 
Feeds: 6

1lb of ground beef
1 packet of Lawry’s Taco Seasoning
1 poblano pepper diced (seeds and stem removed)
Small flour fajita tortillas
Vegetable oil

1. Brown ground beef with the poblano pepper
2. Drain the fat from the pan and add Lawry’s Taco Seasoning with recommended water
3. Simmer until liquid reduces. While this happens, heat flour tortillas over a low flame
4. In a separate small pan, add oil and heat at medium low
5. Fill tortilla with ground beef (about 2 spoonfuls) and roll
6. Place rolled taco in oil with tortilla flap down. Once taco is golden, flip over and let it get golden.
7. Remove from oil and drain on a napkin covered dish 

TIP: Serve rolled tacos topped with green salsa, sour cream and shredded cheese.
