Angela's Traditional Twist: Chipotle Roasted Sweet Potatoes

Have some extra marinade leftover in the bottle? This can be used to glaze vegetables. Lawry’s boldly spiced Baja Chipotle Marinade pairs well with roasted sweet potatoes for a savory treat.

Prep Time: 10 mins | Cook Time: 40 mins | Serves 4

1 to 1 ½ pounds sweet potatoes, peeled and cut into large chunks
1 red onion, roughly chopped
1 tablespoon cooking oil (such as canola or grapeseed oil)
⅔ cup Lawry’s Baja Chipotle Marinade, divided
⅓ cup finely chopped fresh cilantro

Preheat oven to 375°F. Transfer sweet potato chunks to a covered microwaveable dish and steam 5 minutes. Spread steamed sweet potatoes and chopped onions out on a parchment or silicone lined baking sheet.

Drizzle potatoes and onions with cooking oil and ⅓ cup of Lawry’s Baja Chipotle Marinade; toss to coat. Roast for 20 minutes. Remove from oven and drizzle the sweet potatoes with remaining marinade. Roast again for another 15 minutes, until sweet potatoes are fork tender and nicely caramelized.

Toss with fresh cilantro before serving.
