Brush tomato and onion slices with oil
Broil or grill over medium heat 4 to 5 minutes per side or until tomatoes and onions are browned
Chop tomatoes and onions. Place in medium bowl. Add cilantro, lime juice, garlic salt and chipotle chili pepper; toss well. Let stand at room temperature 15 minutes to allow flavors to blend. Serve with tortilla chips or as a topping for grilled meat, chicken or fish
