Grilled Fiesta Shrimp Cocktail

Grilling shrimp for shrimp cocktail adds so much more flavor than steaming. Instead of cocktail sauce, serve the shrimp with a chunky salsa.

  • Mix 1 tablespoon of the marinade, red pepper, onion, cilantro and lime juice in small bowl. Cover. Refrigerate until ready to serve.

  • Meanwhile, place shrimp in large resealable plastic bag or glass dish. Add 3/4 cup of the remaining marinade; turn to coat well.

  • Refrigerate 15 minutes. Remove shrimp from marinade. Discard any remaining marinade in bag.

  • Grill over medium heat 6 to 8 minutes or just until shrimp turn pink, turning frequently and brushing with remaining marinade. Serve shrimp with salsa.
