Own the cookout with this sweet and spicy appetizer. Place bacon-wrapped chicken pinwheels on skewers for a “lollipop” effect - and add peppery heat with McCormick® Grill Mates Hot Pepper Blackened Seasoning. Layer on additional Hot Pepper Blackened flavor with a homemade Sweet Pepper Dipping Sauce. Recipe and photo courtesy of Susie Bulloch of Hey Grill, Hey.
Place bell pepper, sugar, vinegar, butter and 1 tablespoon Seasoning in blender container; cover. Pulse until peppers are finely chopped. Transfer mixture to small saucepan. Bring to boil; reduce heat and simmer 15 minutes. Set aside and keep warm.
Meanwhile, slice chicken breasts lengthwise into 1-inch thick strips. Place one piece of bacon on cutting board and top with one strip of chicken. Roll into a pinwheel and secure with a skewer. Repeat with remaining chicken strips and bacon. Sprinkle all sides of each "lollipop" with remaining 1 tablespoon Seasoning. Grill over medium-high heat 6 to 8 minutes per side, or until cooked through.
Serve with Sweet Pepper Sauce on the side for dipping.
