Warm Tuscan White Bean Salad with Lemon Vinaigrette

Simple white beans are transformed into a delicious salad with a lemony vinaigrette, redolent with herbs and garlic.

  • For the Lemon Vinaigrette, mix oil and lemon juice in small bowl with wire whisk until well blended. Add chives and seasonings; mix well. Set aside

  • Mix beans and tomatoes in large skillet. Cook on medium heat 5 minutes or until heated through, stirring occasionally. Remove from heat. Add Vinaigrette and 2 tablespoons of the Parmesan cheese; mix lightly

  • Sprinkle salad with remaining 1 tablespoon Parmesan cheese before serving
