Roasted Rosemary Fingerling Potatoes

Fingerling potatoes are a variety of fully mature potatoes which are slender and knobby in appearance. Roasting them enhances their rich nutty flavor.

  • Preheat oven to 425°F. Toss potatoes and oil in large bowl. Sprinkle with seasonings; toss to coat well

  • Spread potatoes in single layer on foil-lined 15x10x1-inch baking pan

  • Roast 35 to 40 minutes or until potatoes are tender and golden brown, stirring halfway through cooking
