Cayenne Cherry-Studded Corn Muffins

Cayenne pepper, tart cherries and Monterey Jack cheese add layers of flavor to corn muffins.

  • Preheat oven to 375°F. Lightly grease or line 12 muffin cups with paper baking cups. Set aside

  • Mix flour, cornmeal, sugar, baking powder, salt and cayenne pepper in large bowl. Beat egg, milk and butter in medium bowl until well mixed. Add to flour mixture; stir just until moistened. Stir in cheese and cherries. Spoon batter into prepared muffin cups, filling each cup 3/4 full

  • Bake 12 to 15 minutes or until toothpick inserted into center of muffins comes out clean. Serve warm
