This colorful rice salad is as appealing to the eyes as it is to the taste buds. A beautiful medley of vegetables is mixed with Zatarain's Red Beans and Rice Mix for a flavorful side dish.
3 cups water
1 package ZATARAIN'S® Red Beans and Rice
1 can (15 1/4 ounces) whole kernel corn, drained
1/2 cup chopped red bell pepper
1/2 cup chopped celery
1/2 cup chopped red onion
1/4 cup cider vinegar
2 tablespoons olive oil
Bring water to boil in medium saucepan. Stir in Rice Mix; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Stir occasionally to prevent sticking. Remove from heat. Let stand 5 minutes.
Spoon rice mixture into large bowl. Cool to room temperature. Fluff with fork.
Mix remaining ingredients in medium bowl. Add to rice mixture; mix well. Serve immediately. Or, cover and refrigerate until ready to serve.
