Easy to make, easy on the belly. Yellow rice and cranberries give this side its New Orleans-style flavor. Serve this gluten-free recipe alongside the holiday roast or turkey. Add slivered almonds for a festive look.
2 teaspoons oil
1/2 cup chopped celery
1/2 cup chopped onion
2 cups water
1 package ZATARAIN'S® Yellow Rice
1/2 cup dried cranberries
Heat oil in large skillet on medium heat. Add celery and onion; cook and stir 4 minutes or until softened.
Stir in water, Rice Mix and cranberries. Bring to boil. Reduce heat to low; cover and simmer 25 minutes or until most of the water is absorbed and rice is tender. Remove from heat. Let stand 5 minutes. Fluff with fork before serving.
Test Kitchen Tip: Sprinkle with toasted slivered almonds, if desired.
