A simple take on the traditional Monday night meal in New Orleans. Made with Zatarain’s Red Beans and Rice Mix, this can be served as a meatless meal or as a side to pork or chicken.
Mix water, Rice Mix and butter in 2-quart saucepan until well blended. Bring to boil. Reduce heat to low. Cover. Simmer 25 minutes or until rice is tender. Stir occasionally to prevent rice and beans from sticking.
Remove from heat. Let stand 5 minutes. Fluff with fork before serving.
Test Kitchen Tips:
• Red Beans and Rice will be saucy. For less saucy dish, reduce water to 3 cups.
• If spicier Red Beans and Rice is desired, try Zatarain's® Spicy Red Beans and Rice.
Microwave Directions: Mix 3 cups hot water, Rice Mix and butter, margarine or olive oil in 2 1/2-quart microwavable bowl until well blended. Cover. Microwave on HIGH 5 minutes. Stir. Microwave on MEDIUM (50% power) 18 minutes or until rice is tender, stirring occasionally. Let stand in microwave 5 minutes. Fluff with fork before serving.
