Spanish Chicken with Olives

  • Heat oil in large skillet on medium-high heat. Add bell peppers and onions; cook and stir 5 minutes or until softened. Add chicken; cook and stir 5 minutes or until browned. Remove chicken and vegetables; set aside

  • Stir water, tomatoes and tomato paste into skillet; bring to boil. Stir in Rice Mix; return to boil. Reduce heat to low; cover and simmer 15 minutes

  • Stir chicken and vegetables into rice mixture. Cover and cook 10 minutes longer or until rice is tender. Remove from heat. Stir in olives. Let stand 5 minutes before serving
