Red Bean, Chicken and Cheese Burritos

Make it a Mexican night with this burrito recipe, made easily at home. Use Zatarain’s Red Beans and Rice mix to liven up your chicken, salsa, cheese and tortillas – a hearty meal for the whole family.

  • Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 6 minutes or until cooked through. Remove chicken; set aside. Add water to skillet; bring to boil. Stir in Rice Mix; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Stir occasionally to prevent sticking. Remove from heat. Stir 1/2 of the cheese into rice. Let stand 5 minutes.

  • Preheat oven to 350°F. Divide rice mixture, chicken, remaining cheese and salsa among tortillas. Fold into burritos. Place in 13x9-inch baking dish.

  • Bake 10 minutes or until heated through. Serve with additional salsa, if desired.
