Cherry tomatoes and fresh basil add bright, fresh flavor to this garlicky one-skillet chicken and rice dinner. It makes a quick and easy weeknight meal.
Melt butter in large skillet on medium heat. Add chicken and tomatoes; cook and stir 5 minutes or until chicken is no longer pink. Remove from skillet. Set aside.
Stir water and Rice Mix into skillet. Bring to boil. Reduce heat to low; cover and simmer 20 minutes.
Stir in chicken and tomatoes; cover and simmer 5 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes. Sprinkle with basil.
