Almond Chicken

Servings: 6 (1 cup)

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound boneless skinless chicken breasts, cut into 1/2-inch chunks
  • 2 1/4 cups water
  • 1 package Zatarain's® Long Grain & Wild Rice
  • 1/2 cup sliced celery
  • 1/2 cup sliced onion
  • 1/2 cup sliced water chestnuts
  • 1/4 cup sliced almonds

INSTRUCTIONS

  • 1 Heat oil in large skillet on medium heat. Add chicken; cook and stir 5 minutes or until no longer pink. Remove from skillet. Set aside.
  • 2 Stir water, Rice Mix, celery, onion and water chestnuts into skillet. Bring to boil. Reduce heat to low; cover and simmer 20 minutes.
  • 3 Stir in chicken; cover and simmer 5 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes. Sprinkle with almonds.
