This easy one-skillet chicken and rice had texture and flavor from the wild rice, celery, water chestnuts and sliced almonds.
1 tablespoon vegetable oil
1 pound boneless skinless chicken breasts, cut into 1/2-inch chunks
2 1/4 cups water
1 package ZATARAIN'S® Long Grain & Wild Rice Mix
1/2 cup sliced celery
1/2 cup sliced onion
1/2 cup sliced water chestnuts
1/4 cup sliced almonds
Heat oil in large skillet on medium heat. Add chicken; cook and stir 5 minutes or until no longer pink. Remove from skillet. Set aside.
Stir water, Rice Mix, celery, onion and water chestnuts into skillet. Bring to boil. Reduce heat to low; cover and simmer 20 minutes.
Stir in chicken; cover and simmer 5 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes. Sprinkle with almonds.
