INGREDIENTS
1 tablespoon olive oil
1/2 cup chopped onion
1 cup long grain rice
3 tablespoons McCormick® Smoky Sweet Pepper Blend
2 1/2 cups reduced sodium chicken broth
1 can (14 1/2 ounces) diced tomatoes, drained
DIRECTIONS
1. Heat oil in large skillet on medium heat. Add onion; cook and stir 2 minutes or until softened. Add rice and Seasoning; cook and stir 2 minutes.
2. Stir in broth. Bring to boil. Reduce heat to low; cover and simmer 15 minutes. Stir in tomatoes. Cover and simmer 8 to 10 minutes or until rice is tender and liquid is absorbed.
