Tuscan Pasta

Fresh garden vegetables and pasta are tossed with a chunky tomato sauce with zesty herbs.

  • Mix tomatoes, tomato sauce, sugar and seasonings in medium saucepan. Bring to boil on medium heat. Reduce heat to low; cover and simmer 20 minutes.

  • Heat oil in large skillet on medium-high heat. Add zucchini, mushrooms and onion; cook and stir 4 minutes or until vegetables are tender-crisp. Stir tomato sauce into vegetables.

  • Meanwhile, cook pasta as directed on package. Drain well. Place pasta in serving bowl. Add vegetable mixture; toss well.

    I make this all the time, ever since I saw it on the website a couple of years ago. It's one of our very favorites! have been making it I make it exactly as the recipe says, only sometimes I use spaghetti sauce instead of the tomato sauce if I have some in the fridge. It is excellent and is a great "go-to" recipe, especially if you like to have a couple of meat free recipes every week as I do. Try it, you will love it!

    Can't wait to try it! Though its a great meatless entree, adding sausage or even chicken would be wonderful!!

    So yummy. Just tried today and it was amazing. Added Hot Italian Sausages to the mix and was fantastic. Kids were in love and so was my husband. So good.
