Test Kitchen Tip: If your grill does not have a smoker tray, place wood chips on large sheet of heavy duty foil. Fold up sides to form a pouch. Poke several holes in foil. Continue as directed.
Alternate Cooking Methods:
- To smoke the tomatoes in the oven: Place wet wood chips in 13x9-inch foil-lined baking pan. Place a metal rack over the wood chips. Place tomatoes on rack. Cover tightly with foil. Bake on lowest rack of preheated 500°F oven 15 minutes or until tomatoes are smoky and tender-firm. Continue as directed.
- To cook paella on the stove: Prepare paella as directed in Step 3 in a 5-quart Dutch oven or large deep skillet on medium-high heat. Continue as directed in Step 4, covering Dutch oven with lid.
