Lemon & Pepper Chicken with Penne and Vegetables

Servings: 7 (1 cup)

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts, cut into thin strips
  • 14 ounces frozen vegetable blend, such as zucchini, squash, red onion and bell peppers (about 3 1/2 cups)
  • 1 tablespoon McCormick® Perfect Pinch® Lemon Pepper Seasoning
  • 8 ounces penne pasta, cooked as directed on package (about 4 cups cooked)
  • 1/4 cup chicken stock
  • 1/4 cup shredded Parmesan cheese

INSTRUCTIONS

  • 1 Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook and stir 8 minutes or until almost done. Remove chicken from skillet.
  • 2 Stir vegetables into skillet; cook and stir 5 minutes or just until tender.
  • 3 Return chicken to skillet. Sprinkle with Seasoning. Add penne and chicken stock; cook and stir 2 minutes or until heated through. Sprinkle with Parmesan cheese.
