This sure as heck didn't taste like "My Mom's Meatloaf" it tasted like a seasoned up hamburger. I feed most of it to my Dog. The Meatloaf that my Momma makes has Hamburger, Pork and Veal in it. And you don't use Ketchup ?? you use Tomato Paste over the top and a couple of Bell Pepper rings on top. This recipe was a waste of some good burger meat for the grill....

First I tried "your" version of the classic meatloaf. Did not care for the ketchup and the flavor was bland. Changes I made were adding fresh chopped onions in place of the onion powder. Used egg whites in place of the whole egg. Then I added sage and thyme in place of the garlic powder. Baked it for 55 minutes and served it with onion gravy.

I love meatloaf, many better than others. This meatloaf recipe need to have more flavor . I like can diced tomatoes, some sauté onion ,bell pepper, celery, with a touch of sage. The rest of your seasons are ok. O the can tomatoes are mixed with a small can of tomato sauce ,for the top. Otherwise it is a over size hamburger .

This is exactly what I was looking for! There are so many recipes online. But I was working with limited supplies and all other web recipes called for different things we didn't have or that kids wouldn't eat. You can always use this as a base recipe if you do have or like other ingredients. Grateful this was available!

Just plain beef & dry ingredients! Absolutely no texture! I always use 3 meats in meat loaf; usually an 80/20 beef mix, ground pork & veal. If I use lamb instead of pork, I use 70/30 beef for more fat. I must have chopped veg in my meat loaf, either the standard mirepoix, holy trinity, sofrito, or combo of them. I like onion, green pepper, & carrot, however meat loaf is 1 of those things that can be made up of fridge leftovers, too! Instead of dry bread crumbs try using plain old white bread soaked in milk a few min. before mixing, & DON'T over-mix! Too much handling makes it gummy & tough.

Ok. Made this tonight. I would change the following next time: Less bread crumbs; needs 2 eggs, as the mixture was a bit too "dry." And only 1/2 cup ketchup. Otherwise, it was delicious, and very easy to prep. I also baked it for 65 minutes to make sure the middle was done more.

Great recipe just tweaked it a bit by using Trader Joes mild salsa on top instead of ketchup & used Goya Adobo instrad of salt & pepper & Goya tomatoe sause to mix with italian bread crumbs. Then I added some McCormick steakhouse onion burger to add a little nice flavor. :-)

First time I had ever made meatloaf and it was a hit :) Love this one! I did put ketchup IN the mixture instead of on top, different take, but still well received. :)
