Almond Chicken Salad

Almond Chicken Salad is a great way to use leftover chicken or turkey for a sensational lunch or light supper. Golden raisins or dried apricots add sweetness.

  • Mix chicken, celery, apricots and almonds in large bowl. Mix mayonnaise, orange juice concentrate, garlic powder, pepper and ginger in small bowl until well blended. Add to chicken mixture; mix well. Cover.

  • Refrigerate until ready to serve.

  • To serve, line 4 serving plates with lettuce leaves and tomato slices. Top with chicken salad.

Cooking tip

Chicken salad is also great as sandwich filling in pita bread, croissants or crusty rolls.

    Toasted almonds made this dish. I used half of the mayo and substituted in greek yogurt for the remaining volume

    The almond chickens salad is great simple and easy to fix. Works great when you are in a hurry.
