Tiramisu in a cupcake form includes the coffee-flavored cake, sweetened whipped cream cheese and cocoa powder.
1 package (2-layer size) white cake mix
1 tablespoon plus 1 teaspoon McCormick® Pure Coffee Extract , divided
1 teaspoon McCormick® Cinnamon, Ground
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
1 cup heavy cream
1 teaspoon unsweetened cocoa powder
Prepare cake mix as directed on package for cupcakes, adding 1 tablespoon of the coffee extract and cinnamon.
Bake as directed on package for cupcakes. Cool completely.
Meanwhile, stir cream cheese, sugar and remaining 1 teaspoon coffee extract in medium bowl until well blended. Beat cream in large chilled bowl with electric mixer with chilled beaters on medium speed until soft peaks form. Add 1/4 of the whipped cream to cream cheese mixture. Stir gently with spatula until well blended. Add remaining whipped cream. Stir gently to incorporate whipped cream. Frost cupcakes. Sprinkle tops with cocoa powder.
Substitution Tip: If coffee extract is unavailable, use instant espresso powder instead. Add 2 teaspoons to the cupcake batter and 1 teaspoon to the frosting.
