These bars have an irresistible citrus flavor that comes from fresh lime juice and McCormick® Pure Lemon Extract. Bring them to a potluck, picnic, summer barbecue or tailgate.
1 cup flour
1/3 cup confectioners' sugar
1/2 teaspoon McCormick® Ginger, Ground
1/4 teaspoon salt
1/2 cup (1 stick) cold butter, cut into chunks
1 1/4 cups granulated sugar
2 tablespoons flour
1/2 teaspoon baking powder
1/2 cup fresh lime juice
3 eggs, lightly beaten
2 teaspoons McCormick® Pure Lemon Extract
4 drops McCormick® Green Food Color
Preheat oven to 350°F. For the Crust, mix flour, confectioners' sugar, ginger and salt in large bowl. Cut in butter with pastry blender or 2 knives until mixture resemble coarse crumbs. Pat mixture into greased foil-lined 9-inch square baking pan. Bake 15 to 18 minutes or until crust is lightly browned. Remove from oven.
For the Filling, mix granulated sugar, flour and baking powder in large bowl. Add lime juice, eggs, lemon extract and food color; whisk until blended. Pour filling over warm baked crust.
Bake 20 to 25 minutes longer or until filling is set. Cool in pan on wire rack. Cut into bars.

These are beautiful! I used 5 limes and only got about 1/4 cup of lime juice but otherwise these were delicious and easy to make.
