Sausage Frittata

Frittatas are flat Italian omelets made with variety of fillings. Serve warm or at room temperature.

  • Heat oil in large ovenproof nonstick skillet on medium heat. Add onion, bell pepper and potatoes; cook and stir 4 minutes. Reduce heat to medium-low.

  • Beat eggs, milk, basil, salt and pepper in medium bowl. Stir in sausage. Pour into skillet. Cook without stirring 5 minutes or until eggs are set on bottom. Sprinkle with cheese.

  • Broil 4 to 5 minutes until eggs are set and cheese is lightly browned. Sprinkle with additional basil, if desired.

Cooking tip

Wrap the skillet handle in foil if your skillet is not ovenproof.

    I MAKE A RECIPE SIMILAR TO THIS, ADD BACON AND COTTAGE CHEESE AND JALAPENO PEPPERS AND MORE CHEESE, I USE ALMOST 4 CUPS ...3 IN AND 1 TO TOP , NOT LOW CAL !! BAKED IN A 9 x 13 PAN FOR 45 MINUTES
