Makes 8 servings.
You Will Need
1 pkg. McCormick® Enchilada Sauce Mix
1 ½ cups water
1 can (8 oz.) tomato sauce
1 lb. lean ground beef or turkey
8 corn tortillas or flour tortillas (6-inch)
1 cup shredded Cheddar cheese
STIR Sauce Mix, water and tomato sauce in medium saucepan. Bring to boil. Reduce heat and simmer 5 minutes or until thickened, stirring occasionally.
BROWN meat in large skillet on medium-high heat. Drain fat. Stir in ½ cup of the sauce.
HEAT tortillas according to package directions; dip into sauce to coat. Spoon about ¼ cup meat filling into each tortilla. Roll tortillas tightly; place seam-side down in greased 11x7-inch baking dish. Pour remaining sauce over enchiladas. Top with cheese.
BAKE in 350°F oven 15 minutes or until sauce is bubbly and cheese is melted.
