Sprinkle grilled zucchini with toasted pine nuts and crumbled goat cheese for an extravagant summer vegetable dish.
1/2 cup Lawry's® Lemon Pepper Marinade with Lemon Juice
2 pounds zucchini, halved lengthwise
1/2 cup pine nuts, toasted
1/2 cup crumbled goat cheese
In large resealable plastic bag, pour 1/4 cup Lawry's® Lemon Pepper Marinade with Lemon Juice over zucchini; turn to coat. Close bag and marinate in refrigerator 30 minutes.
Remove zucchini from Marinade, discarding Marinade. Grill or broil zucchini, turning once and brushing frequently with remaining Marinade, 6 minutes or until tender; coarsely chop.
Toss zucchini with pine nuts, then top with cheese.
