Wake up the flavor of roast chicken with a splash of Lawry’s® Tuscan Sun-Dried Tomato Marinade. Add veggies to the roasting pan to make this a complete dinner.
2 1/2 pounds bone-in chicken parts
1 package (8 ounces) mushrooms, halved
1 medium onion, cut into wedges
1 medium red bell pepper, cut into 1-inch pieces
1 medium yellow squash, cut into 1-inch cubes
1 medium zucchini, cut into 1-inch cubes
1 cup Lawry's® Tuscan Sun Dried Tomato Marinade with Minced Garlic and Olive Oil
Preheat oven to 400°F. Arrange chicken and vegetables in large foil-lined shallow baking pan. Pour marinade evenly over chicken and vegetables.
Bake 45 minutes or until chicken is cooked through and vegetables are tender. Serve with crusty Italian bread, if desired.
