Inspired by the sun-drenched villages of Tuscany, Lawry’s® Tuscan Sun-Dried Tomato Marinade adds the fantastic flavors of extra virgin olive oil, sun-dried tomatoes and sweet red bell peppers to grilled chicken and vegetables.
1 1/2 pounds boneless skinless chicken breast halves
1 cup Lawry's® Tuscan Sun Dried Tomato Marinade with Minced Garlic and Olive Oil , divided
1 red bell pepper, cored and quartered
1 yellow bell pepper, cored and quartered
1 small eggplant, sliced lengthwise into 1/2-inch thick slices
1 medium zucchini, sliced lengthwise into 1/2-inch thick slices
Place chicken in large resealable plastic bag or glass dish. Add 1/2 cup of the marinade; turn to coat well.
Refrigerate 30 minutes or longer for extra flavor. Remove chicken from marinade. Discard any remaining marinade.
Grill chicken over medium heat 6 to 7 minutes per side or until cooked through, brushing with 2 tablespoons of the remaining marinade halfway through cooking. Grill vegetables over medium heat 2 to 4 minutes per side or until tender-crisp, brushing occasionally with remaining marinade.
