Reverse Sear Method for larger pieces of bone-in chicken: Prepare grill for indirect medium heat (350°F to 375°F). Preheat grill by turning all burners to medium. Turn off burner(s) on one side of grill. Grill chicken over unlit side, with grill covered, to internal temperature of 155°F. Move chicken to lit side of grill. Grill until chicken is nicely charred and cooked through (internal temperature of 165°F.)
