The classic pairing of lamb and mint gets a new twist with Grill Mates® Mojito Lime marinated lamb chops served with Mint Pesto. Photo credit: Georgia Johnson from Comfort of Cooking.
1 package McCormick® Grill Mates® Mojito Lime Marinade
1/4 cup olive oil
1/4 cup fresh lime juice
1 clove garlic, finely chopped
2 pounds bone-in lamb loin or blade chops, trimmed
Mix Marinade Mix, oil, lime juice and garlic in small bowl. Reserve 2 tablespoons marinade for brushing. Place lamb chops in large resealable plastic bag or glass dish. Add remaining marinade; turn to coat well.
Refrigerate 15 minutes or longer for extra flavor. Remove lamb chops from marinade. Discard any remaining marinade.
Grill over medium-high heat 3 to 5 minutes per side or until desired doneness, brushing with reserved marinade halfway through cooking. Serve lamb chops with Mint Pesto, if desired.
Serving Suggestion: Serve lamb chops with Mint Pesto.
