Simple white beans are transformed into a delicious salad with a lemony vinaigrette, redolent with herbs and garlic.
3 tablespoons olive oil
2 tablespoons lemon juice
3 tablespoons snipped fresh chives
1 tablespoon McCormick Gourmet™ Parsley, Flat Leaf
2 teaspoons McCormick Gourmet™ Mediterranean Spiced Sea Salt
1 1/2 teaspoons McCormick Gourmet™ Thyme
1 teaspoon minced garlic
1/2 teaspoon McCormick Gourmet™ Black Pepper, Coarse Ground
1/2 teaspoon McCormick Gourmet™ Rosemary, Crushed
2 cans (15 ounces each) white beans, drained and rinsed
1 cup diced tomatoes
3 tablespoons grated Parmesan cheese, divided
For the Lemon Vinaigrette, mix oil and lemon juice in small bowl with wire whisk until well blended. Add chives and seasonings; mix well. Set aside.
Mix beans and tomatoes in large skillet. Cook on medium heat 5 minutes or until heated through, stirring occasionally. Remove from heat. Add Vinaigrette and 2 tablespoons of the Parmesan cheese; mix lightly.
Sprinkle salad with remaining 1 tablespoon Parmesan cheese before serving.
