Tomatillos look like little green tomatoes with papery skins, but they have a lemony, herby taste with a crunchy texture. They’re used in Mexican dishes, such as green salsas. Photo credit: Maria Lichty from Two Peas and Their Pod.
4 ounces tomatillos, papery skin removed, wiped with damp cloth, and finely chopped
1 can (15 ounces) black beans, drained and rinsed
1 medium ripe avocado, peeled, seeded and diced
1/2 cup finely chopped red onion
1/2 cup finely chopped red bell pepper
1 teaspoon McCormick Gourmet™ Cumin, Ground
2 to 4 tablespoons fresh lime juice
4 teaspoons McCormick Gourmet™ Cilantro
1/4 teaspoon McCormick Gourmet™ Sicilian Sea Salt
Place all ingredients in medium bowl; toss gently until well blended. Cover.
Refrigerate until ready to serve.
Test Kitchen Tip: Finely chopped cucumber may be substituted for the tomatillos. Flavor will vary slightly.
