This exotic rice dish was created by Chef Allen Susser, of Chef Allen's Restaurant, in Aventura, Florida. It's perfect for entertaining.
2 tablespoons butter
1/2 cup cashews
1/2 teaspoon McCormick Gourmet™ Cinnamon, Ground Saigon
1/4 teaspoon McCormick Gourmet™ Cardamom, Ground
1/4 teaspoon McCormick Gourmet™ Black Pepper, Coarse Ground
1/8 teaspoon McCormick Gourmet™ Allspice, Ground Jamaican
1 1/2 cups basmati rice
2 1/4 cups water
1 1/2 teaspoons McCormick Gourmet™ Sicilian Sea Salt
1/2 cup raisins
1 ripe mango, peeled, pitted and diced (1 cup)
1/3 cup thinly sliced green onions
Melt butter in medium saucepan on medium heat. Add cashews; cook and stir until golden brown. Remove cashews with slotted spoon. Set aside. Add ground spices to saucepan; cook and stir about 30 seconds or until aromatic.
Stir rice into saucepan. Add water and sea salt; bring to boil. Reduce heat to low; cover and simmer 15 minutes. Remove from heat.
Stir in cashews, raisins and mango. Cover and let stand 5 minutes. Stir in green onions.
