Try this memorable salad that includes juicy oranges, fresh radishes, baby spinach and almonds tossed with a light vinaigrette.
1/3 cup olive oil
1/4 cup lemon juice
2 tablespoons orange juice
2 1/2 teaspoons sugar
1 teaspoon McCormick Gourmet™ Organic Cinnamon, Saigon, Ground
1/2 teaspoon McCormick Gourmet™ Organic Cumin, Ground
1/8 teaspoon McCormick Gourmet™ Organic Cayenne Pepper
1/8 teaspoon salt
3 seedless oranges, peeled and thinly sliced
1 bunch fresh radishes, thinly sliced (about 1 cup)
1 package (6 ounces) baby spinach
1/4 cup sliced almonds, lightly toasted
For the Vinaigrette, mix all ingredients in small bowl with wire whisk until well blended.
For the Salad, toss all ingredients, except almonds, in large bowl.
Just before serving, toss salad with 1/2 of the vinaigrette. Sprinkle with almonds. Serve with remaining vinaigrette.
Substitution Tip: Use 6 cups torn spinach leaves in place of the baby spinach.
