A hearty pasta salad for a cookout, potluck or picnic -- it's brimming with vegetables, fresh mozzarella, pepperoni and olives.
8 ounces rotini pasta
1 1/4 cups cut-up broccoli florets
1 1/4 cups red bell pepper, cut into strips
1 1/4 cups sliced carrots
1 1/4 cups cherry tomatoes, halved
8 ounces bite-size fresh balls of mozzarella
4 ounces pepperoni, sliced
1/4 cup pitted black olives
1/2 cup olive oil
1/2 cup white wine vinegar
1 package McCormick Gourmet™ Sweet Basil & Oregano Bruschetta Chicken Recipe & Seasoning Mix
Cook pasta as directed on package. Drain well. Place in large bowl. Add vegetables, mozzarella, pepperoni and olives; toss well.
Mix oil, vinegar and Seasoning Mix in medium bowl with wire whisk until well blended. Pour over pasta mixture; toss to coat well. Cover.
Refrigerate 1 hour or until ready to serve.
