The lively avocado topping is a wonderful accent to flavorful marinated pork chops. Photo credit: Georgia Johnson from Comfort of Cooking.
1/4 cup extra virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon McCormick Gourmet™ Cilantro
3/4 teaspoon salt
1/4 teaspoon McCormick Gourmet™ Garlic Powder, California
1/8 teaspoon McCormick Gourmet™ Red Pepper, Crushed
4 boneless center-cut pork chops, 1/2-inch thick
1/4 teaspoon McCormick Gourmet™ Paprika
3/4 cup finely chopped tomatoes
1 medium avocado, peeled, seeded and diced
Mix oil, lime juice, cilantro, salt, garlic powder and red pepper in medium bowl until well blended. Place pork in large resealable plastic bag or glass dish. Spoon 1/2 of the oil mixture over pork; turn to coat well. Reserve remaining oil mixture.
Refrigerate pork 30 minutes or longer for extra flavor. Remove pork from marinade. Discard any remaining marinade. Add tomatoes and avocado to reserved oil mixture; toss gently. Set aside.
Preheat broiler. Place pork chops on broiler rack and pan coated with no stick cooking spray. Broil 5 minutes; turn and sprinkle with paprika. Broil 5 minutes longer or until desired doneness. Serve pork chops with avocado mixture.
