Coat chicken with 1/3 cup of the cornstarch
Heat 3 tablespoons of the oil in large nonstick skillet on medium-high heat. Add chicken; stir fry 7 to 8 minutes or until golden brown and cooked through. Remove from skillet. Heat remaining 1 tablespoon oil in skillet. Add vegetables; stir fry 3 to 4 minutes or until tender-crisp
Mix Seasoning Mix, remaining 1 tablespoon cornstarch, water and soy sauce until smooth. Add to skillet. Bring to boil. Cook 2 minutes or until sauce is slightly thickened. Return chicken to skillet; stir fry until heated through. Serve with cooked rice, if desired
