Smoky Beef and Butternut Squash Stew

The smoky bourbon flavor along with the sweet spices in McCormick® Gourmet Bourbon Spiced Pork with Roasted Sweet Potatoes & Apples Recipe & Seasoning Mix enhance this beef stew made with butternut squash instead of typical potatoes.

  • Sprinkle beef with 1 tablespoon of the Seasoning Mix. Heat oil in Dutch oven on medium-high heat. Add beef in batches; cook and stir about 5 minutes or until browned. Remove beef from pan

  • Stir onion and bell pepper into the pan; cook and stir 3 minutes. Return beef to pan. Sprinkle with flour; cook and stir 2 minutes

  • Stir in butternut squash, stock, tomatoes, brown sugar and remaining Seasoning Mix. Bring to boil. Reduce heat to low; cover and simmer 30 minutes, stirring occasionally. Remove cover; simmer 20 minutes or until meat is tender and stew is slightly thickened

    A nice an different take on my stew making:) Adjusted to 1/2 the recipe, added mushrooms to stretch the meat. Also added celery and carrot (aint stew with them!) and a nice splash of red wine. Voila!
