For a change of pace, prepare chili with chicken instead of the traditional beef. This version has tender chunks of chicken, white beans, tomatoes and corn with smoky flavor from Smoked Paprika Chicken Tacos Recipe & Seasoning Mix.
1 tablespoon oil
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
1 medium green bell pepper, chopped
1 package McCormick Gourmet™ Smoked Paprika Chicken Taco Recipe & Seasoning Mix
2 cans (15 ounces each) great Northern beans, drained and rinsed
1 can (14 1/2 ounces) diced tomatoes, undrained
1 can (8 3/4 ounces) whole kernel corn, drained
1 cup Kitchen Basics® Original Chicken Stock
Heat oil in large skillet on medium-high heat. Add chicken and bell pepper; cook and stir 5 minutes or until lightly browned. Add Seasoning Mix; cook and stir 1 minute.
Stir in beans, tomatoes, corn and stock. Bring to boil. Reduce heat to low; simmer 20 minutes. Serve with desired toppings.
Serving Suggestion: Serve chili with assorted toppings, such as shredded cheese, chopped onions and sour cream.
