Capture the wonderful flavors of the Mediterranean -- Herbes de Provence, lemon, fennel and Kalamata olives in this chicken recipe.
1 package McCormick Gourmet™ Herbes de Provence Roasted Chicken & Potatoes Recipe & Seasoning Mix
2 tablespoons olive oil
2 tablespoons honey
2 tablespoons lemon juice
1 teaspoon grated lemon peel
3 pounds bone-in chicken parts
1 fennel bulb, tops removed and bulb sliced 1/4-inch thick
1 cup halved or quartered small white onions
1/2 cup pitted Kalamata olives
Preheat oven to 425°F. Mix Seasoning Mix, oil, honey, lemon juice and lemon peel in large bowl. Add chicken, fennel, onions and olives; toss to coat well.
Arrange chicken, skin side down, and vegetables in single layer on large shallow foil-lined baking pan sprayed with no stick cooking spray.
Roast 45 minutes or until chicken is cooked through and vegetables are tender. Stir vegetables and turn chicken after 30 minutes.
