Ingredients which define Mediterranean cooking – basil, oregano, rosemary, garlic, fennel and tomatoes – add vibrant flavor to mild salmon.
1 teaspoon McCormick Gourmet™ Basil, Mediterranean
1 teaspoon McCormick Gourmet™ Garlic Powder, California
1/2 teaspoon McCormick Gourmet™ Oregano, Mediterranean
1/2 teaspoon McCormick Gourmet™ Rosemary, Crushed
1/2 teaspoon McCormick Gourmet™ Sicilian Sea Salt
4 salmon fillets, skin on (4 ounces each)
1 tablespoon plus 2 teaspoons olive oil, divided
2 tablespoons sugar
1 medium fennel bulb, cored and thinly sliced
1 cup cherry tomatoes
Mix seasonings in medium bowl. Sprinkle 2 teaspoons over salmon. Reserve remaining seasoning mixture in bowl. Set aside.
Heat 1 tablespoon of the oil in large skillet on medium-high heat. Place salmon, skin-side up, in skillet. Cook 5 minutes.
Meanwhile, add sugar and remaining 2 teaspoons oil to reserved seasoning mixture; mix well. Add fennel and tomatoes; toss to coat. Turn salmon fillets. Place fennel mixture around salmon in skillet. Cook 6 minutes or until fish flakes easily with a fork. Serve with lemon wedges.
To prepare in a cast-iron skillet: Cook salmon, skin-side up, in 12-inch cast iron skillet on medium heat 3 minutes. Continue as directed. (Not recommended if cooking on a glass top range.)

Never had much luck with salmon, the taste was always so mild and no matter what the marinade or seasoning it was just never a favorite....until now! So easy and the flavor was wonderful. This is my recipe default for salmon from now on, can't wait to make it for a few guests. thank you!

This has to be the best salmon i have ever made. Delicious! I shared the recipe with multiple people already. YUM!
My husband is obsessed with this recipe!
Simple and fantastic. Wow!
I fixed this according to directions. This recipe is fabulous. I love salmon and have been searching for different ways to cook it (normally grill or broil). The flavor is similar to a sweet teriyaki, but not quite. The fennel contributes a great deal to the flavor. With it's flavor, it somehow balances it to just the right flavor and sweetness. I highly recommend this recipe.
I found this recipe in a magazine ad for McCormick seasonings. Fixed it with onions not fennel bulb. left out the sugar (watching sugar intake) and we LOVE it. I prepare it at least once a week. My husband never liked salmon steaks, now this is his favorite dish. The recipe does not include enough of your seasoning so I have doubled it and am only preparing 2 skinless salmon steaks for the two of us. I have shared the recipe with several of my friends. Thank you!
